Producing this Harney & Sons Culinary Matcha involves grounding the tea leaves between two stones and air drying which is why the colour of the powder is almost neon green. The process has not changed from centuries ago. The aromas are faint and only discernible from the broth. They offer hints of honeydew melon sweetness over a base note of cooked spinach. Since it comes from air dried teas, there are no notes of toastiness. As the other green tea, this one is also caffeinated. Compared to the ceremonial matcha, the culinary grade matcha has a bit more astringent taste and is great to mix with other ingredients when cooking. I have been drinking Matcha for about 6 months now. I decided to purchase from Premium Teas and I'm glad I did!
Premium Teas Harney & Sons brand is clearly top quality. The local matcha brands I have purchased from others always had a muddy earthy taste along with a dark brownish green look. Premium Teas brand is a bright green without the earthy taste...and it mixes up with a frothy foam.
